Poke Cucumber Boats
INGREDIENTS:
Microwave brown and wild rice with quinoa
Cucumbers
Ahi poke
Salmon poke
Tofu poke
Furikake for garnish
Roasted sesame seeds for garnish
Arugula sprouts for garnish
DIRECTIONS:
Slice mini cucumbers in half, scoop out the center. Fill with the microwave rice mixture.
Top with your favorite poke.
Sprinkle with furikake and roasted sesame seeds and arugula sprouts on desired poke flavors.
