Poke Cucumber Boats

INGREDIENTS:

  • Microwave brown and wild rice with quinoa

  • Cucumbers

  • Ahi poke

  • Salmon poke

  • Tofu poke

  • Furikake for garnish

  • Roasted sesame seeds for garnish

  • Arugula sprouts for garnish

DIRECTIONS:

  • Slice mini cucumbers in half, scoop out the center.  Fill with the microwave rice mixture.  

  • Top with your favorite poke.   

  • Sprinkle with furikake and roasted sesame seeds and arugula sprouts on desired poke flavors.
